Upcycling the Byproducts of Back Rice An interdisciplinary team of researchers in food science, business administration, and social entrepreneurship at Fu Jen Catholic University, together with Texture Maker Enterprise Co., Ltd., You-Zhuo Co., Ltd., and local farmers in Tianzhong, Changhua County, committed to the upcycling of black rice byproducts that are high in anthocyanin, antioxidant, and fiber. The research team applied fluidized-bed drying technology to stabilize the byproducts, which can extend their applications to be materials for food processing for bakery, fiber or nutrition supplements, and other new markets. The upcycling process can add value to the rice agriculture and to support Tianzhong’s regional revitalization.
